Soy milk is the most popular alternative to dairy milk. It is made by soaking, grinding and boiling together soybeans and water.
Soy milk is a good source of protein, vitamin A and potassium. Calcium is usually added in the production process, since soy milk contains little digestible calcium. Unlike dairy milk, it is cholesterol free, low fat and low sodium. It doesn’t contain any lactose, so it’s suitable for lactose intolerant people. Compared to cow’s milk, soy milk contains lower level of certain vitamins, so producers often enrich soy milk with vitamin B, D and vitamin E.
